Top tips for the best potato soup

  • Try to dice your potatoes into even size pieces, this way they will cook evenly.
  • This hearty soup is all made in the one pot, so you will need to use a pot that is big enough to hold all of the finished soup.
  • Sauteing the onion in butter is important to add flavour to this soup. Please don't skip that step!
  • You can use a potato masher to make this soup to be whatever consistency you like, depending on how well you mash the cooked potatoes. If you leave the potatoes quite chunky, the soup will be thin but with potato chunks. More mashing will give you a smoother, thicker end product with less "lumps".
  • Once you have added the liquid, you could blend it using an immersion blender (stick blender) to get a super smooth and creamy texture. Make sure it is off the heat to do this or it will splatter.

How do you fix bland potato soup?

Plenty of seasoning!
Use stock or broth to simmer potatoes.
Add bacon.
The addition of herbs like thyme or rosemary.
Stir through some sour cream.

How to thicken potato soup without flour?

The best way to thicken potato soup without flour is to blend some or all of the potatoes themselves to create a thicker soup.

Can this potato soup be made in a crockpot or a slow cooker?

Yes - but you will need to fry the butter and onion in a frypan first (or using the sear function on your slow cooker) then add it to the bowl of your crockpot or slow cooker to achieve the best flavour (especially as we are only using a few ingredients).

Variations

  • Substitute a leek for the onion.
  • Feel free to use unsalted butter if you don't have salted on hand. You can just adjust the taste with more salt at the end.

Optional additions

  • Saute some diced bacon with the onion (or just crumble some diced bacon over the soup at the end).
  • Fresh (or dried) herbs like finely chopped rosemary or thyme leaves would be a lovely addition and really add to the flavour.
  • Add some crushed fresh garlic to the onion just before you finish frying it off (or add garlic powder when you cook the potatoes).
  • Simmer the potatoes in chicken or vegetable broth (or stock) instead of water.
  • Stir in some sour cream at the end.

Storage

  • Once the finished soup is cooled, you can store it in the fridge in an airtight container for 3 to 4 days.

Serving suggestions

  • Serve topped with crumbled bacon, shredded cheddar cheese and sliced green onions (shallots) or chives.
  • Crusty bread is a great side dishfor this soup.
  • This one-pot soup would be the perfect soup to serve in a bread bowl! See my recipe here for a simple bread bowl (a cheat using store-bought rolls) that tastes like garlic bread!
