Isn’t she pretty? I guarantee this strawberry lemonade tastes as good as it looks!
The weather is just starting to warm up here, it is officially spring as of 1 September. Humidity is hanging in the air ever so slightly more than we have been used to for the past 3 months, and I wore sandals for the first time today. Summer is on its way! Which made me feel like a summery fruity drink, something tart with just the right balance of sweetness and packed with healthy ingredients. I decided to make my famous strawberry lemonade….famous only amongst my family but still, it’s delish, I’m sure you’ll like it.
I like to make this lemonade for summer time get togethers…it’s so easy to make, and it looks so pretty and inviting – the strawberries give it an orangey-pink colour – that everyone will be as impressed with how it looks as they will be with how it tastes. I like to make it sugar free using honey, but if you want it a little sweeter, you can add sugar to taste.
As the days get warmer and the evenings longer, I’m sure I’ll be making this strawberry lemonade a lot. It’s really easy to double or triple the ingredients to make bigger batches – if you have a large saucepan this is ideal for soaking the lemon rinds and mix in the other ingredients. I just separate all the ingredients equally between several large jugs to serve.

Ingredients
- 10strawberries
- 6large lemons
- 3cupsboiling water
- 10tbsphoney
- Cold Water
- Ice
Instructions
Clean lemons well. Peel the rind off the lemons and place in a large bowl. Add 3 cups boiling water to the lemon rind and leave to sit until the water is warm.
Remove the rind from the warm water. Set a few pieces aside for garnish.
Squeeze the juice from the lemons and add to the warm rind water.
Blend the strawberries with a little water - about 2 tbsp and add to the lemon juice mixture.
Now add the honey and stir until dissolved. You can add more or less to suit you. (If you're adding sugar, now's the time).
Dilute with cold water to taste. I added 4 cups cold water. Pour into a big jug with ice and mint and serve.
