Description

If you’re looking for an extremely simple meal for those days when even chopping an onion seems like too much, these spicy, garlicky peanut sauce noodles are for you.

Ingredients

Scale

  • 14 tsp red chili flakes (based on spice tolerance & heat of the flakes)
  • 12 cloves of garlic, very finely minced or grated
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 1 tbsp black vinegar, or rice vinegar
  • 2 tbsp peanut butter
  • Pinch of salt, to taste
  • 4 oz of Noodles (or Spaghetti)

Instructions

  1. Bring a pot of water to boil. Once it comes to a boil, add the noodles and cook according to package instructions. Move onto next steps while the water comes to a boil.
  2. Add the chili flakes and garlic to a bowl. Then, heat up 2 tbsp oil in a saucepan until hot and pour over the bowl letting it sizzle. Let this sit for 2 minutes to infuse all the flavor from the chili and garlic into the oil.
  3. Then, add the soy sauce, vinegar, peanut butter and salt to the bowl. Mix well with a. spoon and let it all chill out will the noodles cook. z
  4. Drain the cooked noodles, then pour the sauce over the noodles while they are still hot. If it’s too thick, add in 1-2 tbsp hot water to loosen it up. Toss to combine, garnish with some sesame seeds and/or green onions and enjoy!

Hands down super easy weeknight dinner!! Don’t have to go shop for any special ingredients, these are pretty much made from pantry essentials. While the noodles are getting cooked, make the sauce and you are done in about 20 min start to finish. I added some pan fried plant based chicken strips for some protein, these would be great with some tofu as well! Overall absolutely delish!!!

Easiest lazy lunch/dinner and it’s such a flavour bomb! Made mine with egg hakka noodles, way more garlic than recommended and subbed rice vinegar with white vinegar (mostly because I had it and didn’t want to sleep on this recipe). Definitely adding this to my weekly menu rotation

I was afraid of the vinegar amount but am so glad I followed the recipe. I also only had white vinegar but it worked out well. I used ramen noodles, but only half the noodles because I wasn’t super hungry and had way too much sauce! Decided this was a good problem to have. Next time I’ll add in bok choy

Another great recipe. So easy because all the ingredients are already stocked in my house. I had sunflower butter which was good… I would add more garlic to make more garlic but besides that quick, easy, and delicious!

Delicious recipe, I modified it slightly to suit what I had on hand. I added some honey and cut down the amount of soy sauce to make a sweeter, more peanut-y dish. Absolutely amazing! How long would you recommend storing this sauce? I want to make a larger batch and keep it in the fridge so it can be prepared ahead of time for busy weeknights! Thank you!

Just made this tonight, was not great… too much peanut butter, and probably doesn’t need the salt added. Would potentially be improved with prawns or chicken and some scallions?

What noodles did you use? Perhaps it could also have contributed to the taste

I totally agree, I used a super thin noodle and peanut butter was the first thing you taste lol But I didn’t mind and I look forward to adjusting the measurements to make it more my taste <3

I had this made in under 20 minutes. It was quick, delicious, and so filling!

I doubled the recipe and added 4 tbsp of chilli pepper flakes … don’t do that unless you really, REALLY like spice. My mouth hurts, but it was worth it!

super fun and easy dish to make! i used thai wheat noodles and it came out perfectly. definitely recommend saving some of the noodle water for the sauce to thin it up just a bit. paired the dish with some cucumbers to help break up the heat, but all in all made for a really enjoyable meal!

Love it! I used gochugaru for the chili and it turned out amazing and only took about 15 minutes to throw together perfect quick meal. Next time I think I might add some tofu or chicken for some added protein.

For anyone interested in making this, hopefully you read my comment before making this! I already have some clutch peanut butter sauce recipes but the simplicity of this one intrigued me. Unfortunately the 2tsp of red pepper flakes is way too spicy! I know this is the star ingredient but it just adds way too much heat that males the food unpalatable. I added some maple syrup to balance the heat but would prefer not to have had to add sweetener. I recommend to start with 1/2 a top for mild heat and work your way up, if needed. Not to mention you’re going to really give your stomach a hard time if you’re digesting 1 or more tsps of red chili flakes! 🥵
