This simple and easy Lipton onion soup meatloaf recipe gets tons of flavor from the addition of a packet of Lipton onion soup mix. It’s a family favorite meatloaf recipe that’s incredibly delicious.

This is the best Lipton meatloaf recipe thanks to a secret ingredient. It’s even better than the original recipe because it’s a bacon-wrapped meatloaf with a delicious ketchup glaze. That flavor combination makes it truly mouthwatering and special!

I love to pair this Lipton onion soup mix meatloaf with smooth mashed potatoes, it’s the perfect comfort food for dinner. The dry onion soup mix adds the flavor that every meatloaf dinner needs. It’s such a Souperior meatloaf!

Traditional meatloaf recipes normally use finely diced onions to give extra flavor. This recipe has the onion flavor and more in the Lipton soup mix. That means one less step, and easier is always better in my book!

Ingredients

Ground Beef: When making the absolute best meatloaf you need to use ground beef with a higher percentage of fat (I use 80/20 ground beef). Using a higher percentage of fat gives the meatloaf the extra moisture it needs to keep it from drying out. It also gives it the tender melt-in-your-mouth beefy texture.

Eggs: Eggs are the binding ingredient that holds the meatloaf together.

Breadcrumbs: Breadcrumbs are the best binder and filler. The breadcrumbs absorb the juices and fat from the meatloaf. This helps stop the meatloaf from drying out while it’s cooking. Adding breadcrumbs also allows the meat to stretch further to feed more people. If you want to substitute breadcrumbs for a different filler, you can use panko or crushed Ritz crackers.

Milk: Adding milk to the meatloaf hydrates the breadcrumbs. We add it to boost the moisture content to prevent the meatloaf from becoming dry.

Lipton Onion Soup Mix: Lipton onion soup mix is so versatile and full of flavor. Using it in the meatloaf adds all the spices and seasonings you need without the hassle of digging into your spice rack.

Ketchup: Ketchup is the most common base for a meatloaf glaze! Not only does it add the perfect amount of sweetness, it also has a tangy flavor that pairs well with the beef.

Light Brown Sugar: Light brown sugar adds sweetness to the glaze. It also helps it caramelize perfectly.

Bacon: Bacon gives the meatloaf a delightful flavor and crunch on the outer layer. It traps in the flavors and juices, keeping it perfectly moist. You can switch it up by using different flavors of bacon to add more flavor.

How To Make Meatloaf with Lipton Onion Soup Mix

Add the beaten eggs to a large bowl. Add in the bread crumbs, milk, Lipton Onion Soup Mix, and ketchup.

Stir the mixture until everything is fully combined. Next add the ground beef to the large bowl.

Mix the ground beef and the wet mixture together with your hands. Mix until the egg is combined into the beef, but be sure not to over mix! Transfer the best meatloaf mixture to the prepared baking sheet. Use your hands to form the meatloaf, pressing it tightly together.

Once the meatloaf is formed equally all the way around, lay the bacon strips lengthwise along the top of the loaf. Make sure to tuck in the ends so they don’t curl upwards while cooking. Spoon the glaze evenly across the top and sides of the meatloaf.

Cook the meatloaf in the oven until the internal temperature has reached 160F at the thickest point of the meatloaf. Once cooked, turn the oven to broil and let the glaze bubble and caramelize. How Do You Make The Best Moist Meatloaf?

You make the best moist meatloaf by using the right percentage of beef. Don’t use lean ground beef, or your meatloaf will turn out dry. The higher percentage of fat is what’s going to keep the meatloaf moist while baking.

What Does Milk Do In Meatloaf?

Milk adds an additional liquid to the meatloaf mixture. Doing this hydrates the breadcrumbs which helps bind the meatloaf together. Without this extra liquid your breadcrumbs would pull any extra juices from the meatloaf leaving it dry and crumbly. If you want to omit milk from your meatloaf, the best substitution would be beef stock.

Leftovers

The leftover slices stayed good stored in an airtight container in my fridge for 3 days. I wouldn’t recommend freezing the leftovers. If you’re looking for a way to use up the leftovers quickly, I love making a meatloaf sandwich!

Ingredients

Meatloaf:

  • 2 eggs
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 1 cup whole milk
  • 1 (2 oz) packet Lipton Onion Soup Mix (or any other onion soup mix)
  • 1/4 cup ketchup
  • 2 pounds medium ground beef

Topping and Glaze:

  • 1/4 cup ketchup
  • 1 Tablespoon packed light brown sugar
  • 8 strips bacon (optional, see notes)*
  • Freshly chopped parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 350F. Line a rimmed baking sheet with aluminum foil, then use non-stick cooking spray to lightly spray the surface.
  2. To a large mixing bowl, add the eggs, and beat. Add in the bread crumbs, milk, Lipton Onion Soup Mix, and ketchup. Mix until fully incorporated.
  3. Next, break up the ground beef into large chunks, and add it to the bowl. Use your hands to mix the meat with the wet mixture until it’s fully combined (it needs to be fully mixed, but it’s important to stop before you overmix it).
  4. Transfer the beef mixture to the center of the prepared baking sheet. Use your hands to form a loaf, making sure the meat is pressed tightly together to keep the loaf from separating while cooking. Also make sure to keep it an even height and thickness across the entire loaf (to ensure even cooking).
  5. Place the bacon strips over the long side of the meatloaf, then slightly tuck the ends under the loaf so it doesn't curl up while baking.
  6. To a small mixing bowl, add the ketchup and brown sugar. Mix to make a glaze. Spoon the glaze on top of the meatloaf, and evenly spread it over the entire loaf (make sure to coat the sides right down to the baking sheet).
  7. Place the meatloaf into the preheated oven and bake for 50-55 minutes, or until an instant read meat thermometer reads an internal temperature of 160F at the thickest point. Turn the broiler on and broil until the glaze starts to bubble and caramelize (about 3-4 minutes).
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing it into 1” thick slices. Garnish with fresh parsley and serve with desired sides.

Notes

You can omit the bacon if you’d prefer. Other than omitting it, the instructions wouldn’t change at all (cooking time etc. remains the same).
