When I saw this recipe in Gooseberry Patch’sSlow-Cooker Christmas Favorites, I knew I was going to add bacon. Who can resist a Bacon Ranch Meatloaf?!

I’m all about cooking with ranch…be it with ranch dip, ranch dip mix, ranch dressing…whatever…I love me a good ranch recipe. Don’t believe me? Here are some of my favorites…Crock Pot Cheesy Ranch Potatoes,BBQ Ranch Stuffed Cheddar Burgers,Slow Cooker Ranch Pork Chops,Creamy Ranch Crock Pot Potatoes,Crock Pot Chicken Wing Dip,Crispy Ranch Pork Chops,Easy Ranch Burgers,All-In-One Bacon Cheese Turkey Burgers…you get the idea. I like ranch. 🙂

Cookin’ Cris’ Dishes: Crock Pot Bacon Ranch Meatloaf

Even though I love ranch, it never dawned on me to use it in a meatloaf! What a great idea! I just had to try it.

When I started pulling out all my ingredients, I saw that we had a pack of bacon in the fridge. The lightbulb went off in my head that bacon would be the perfect compliment and so this Bacon Ranch Meatloaf was born!

Now we found a great deal on a 3 lb pack of ground beef, so I adjusted the ingredients to fit having 3 lbs of ground beef. It is great for feeding a crowd…or Michael’s huge appetite!

Ingredients for Bacon Ranch Meatloaf Crock Pot Recipe

3 eggs beaten
1 1/4 c milk
4 slices of bread torn into small pieces
1 1/2 t salt
3/4 t pepper
3/4 c ketchup plus extra to squirt on the top
3 lbs ground beef
1/2 c onion diced
2-1 oz pkg ranch dressing mix
3 pieces of bacon cooked crisp and crumbled

How to Make Meatloaf in a Crock Pot

  1. Mix together your eggs, milk, bread, salt and pepper in a very large bowl and let set for 20 minutes

  2. Add 3/4 c ketchup, ground beef, onion and ranch mix

  3. Mix well

  4. Form into a mound or loaf (depending on the type of slow cooker you are using) and top with desired amount of ketchup

  5. Cover and cook on high for 15 minutes, switch to low and cook for additional 7 hours

  6. Top with crumbled bacon just before serving

  • This recipe is altered from one found inGooseberry Patch’sSlow-Cooker Christmas Favorites.
  • For this delicious Bacon Ranch Meatloaf, I used my new 9 x13 casserole slow cooker made by Crock Pot. As you can see from the pictures, it worked beautifully! If you don’t have one of these awesome new crocks, you will want to use at least a 5 or 6-quart crock since it is so large.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

Ingredients

  • 3 eggs beaten
  • 1.25 cups milk
  • 4 slices bread torn into small pieces
  • 1.5 teaspoons salt
  • 3/4 teaspoons pepper
  • 3/4 cups ketchup plus extra to squirt on the top
  • 3 lbs ground beef
  • 1/2 cups onion diced
  • 2 oz ranch dressing mix (2-1 oz pkgs)
  • 3 pieces bacon cooked crisp and crumbled

    First, I don’t have a large crock pot so I was wondering, instead of halving the recipe, if I cut the meatloaf in half, and freeze the other half for later use.
    Second, can I cook the bacon but add to the meat mixture instead of adding to top after baking.

    I have tried a few of your recipes for the crock pot but am wondering if you have anything that feeds 1 person not an army. I made the chicken & rice and I’m going to be eating this for days. Can you at least advise how to cut down the recipes? I would really appreciate it.

      Have you tried cutting the casseroles or dishes in half after cooking and freezing them for later? Also, you might try cooking half a recipe in a smaller slow cooker. Smaller portions do best in smaller units– 4 qts or less. Hope that helps!
